The Halia at Raffles Hotel is the sister restaurant to The Halia at Singapore Botanic Gardens. It may not be in the middle of a ginger grove, but the Halia philosophy of sustainable, international fusion food persists – as does the distinctive flavour and aroma of the restaurant’s namesake, the ginger plant (ginger’s Malay name is halia).
