One of the many wildly successful Singapore ventures spearheaded by restaurateur Michael Ma and his IndoChine group, Saint Ma Garden Dining finds itself in the Suntec City Mall sky garden, where it’s all about dining out alfresco on innovative Southeast Asian and European-Asian fusion dishes. A huge venue, Saint Ma Garden Dining can accommodate up to 1000 people and is easily accessed from Promenade, Esplanade and City Hall stations. With a baroque sensibility informing the decor alongside the outdoor scene of vertical gardens and palms, Saint Ma is an ideal place to experience the IndoChine group of restaurant’s ‘nutraceutical’ approach to cuisine – lots of raw food and organic produce, and ingredients sourced from eco-friendly suppliers to make for an incredibly fresh and novel menu. Quite limited seating indoors but it was comfortable. The food was rather good. Had the chicken thigh, char-grilled beef and fried chicken. All nicely done. Seasoning was minimal. Instead, the accompanying sauces were more than enough to go with the main items. Oysters promotion at $2 for the day we went and they were fresh and juicy. Coffee creme brûlée was slightly off as a small part of sugar coating at the top was burnt badly until it tasted butter. Also, there was no happy hour for wines, pity.
