Luckily for those in Singapore, though, 8 Pizza is about as far along as anybody. This trendy Novena hotspot on Thomson Road prepares different doughs in different ways, including cold-fermented and hand-kneaded. Unsurprisingly for a place that cares this much about the preparation, the final product is superb, with just as much time and care devoted to sourcing ingredients, creating workable combinations (from the Italian classics to some carefully curated taste and texture balances) and presenting them beautifully. Oh yeah and that’s just the pizza – did we not mention? Hand-cut fries with truffle bearnaise sauce, chilled pasta with salmon roe, hot pasta with smoked duck or pulled pork – those are just a few other options.
