Decked out in hues of red – which symbolises happiness and good fortune in Chinese culture – this haute restaurant at the Shangri-La Hotel, Singapore in the downtown district of Orchard is highly regarded for its authentic Cantonese fare with hints of influence drawn from Shanghainese and Sichuan cuisines. The Michelin-starred trailblazer in Chinese cuisine, Mok Kit Keung, has just joined the team and he will helm the culinary operations of Shang Palace, overseeing an experienced group of Chinese chefs and all of the hotel’s Chinese food production.
Start off with a round of cold appetisers at Shang Palace, before moving onto barbecued delicacies like Peking duck or whole roasted suckling pig. Then give your health a boost with the eight-hour boiled superior chicken soup, before finally tucking into an array of seafood and meat specialities including deep-fried spare ribs, baked cod fish with miso sauce, and braised baby abalone. For balance, we highly recommend vegetarian and vegetable-based delights such as the stir-fried kai lan, or the sautéed bean curd with bean sprouts and salted black bean.
