When you begin your meal at Riviera, you’d be forgiven for thinking, if only for a moment, that you were seated in Venice overlooking the canali. You are, of course, in Singapore; but you are indeed treated to one of the city’s most stunning waterfront views from Riviera’s Fullerton premises at Marina Bay. The menu is a gourmand’s dream tour of Italy, uniting the finest culinary influences from Northern Italy to the south of the country. Chef Matteo, with his contemporary eye and extensive Italian cooking experience, reflects Italy’s greatest gastronomic finds from the land and the sea on the menu.
Riviera’s house recommendations include the molecular burrata in gazpacho with caviar olive oil bubbles; a smooth rucola sorbet to cleanse the palate and the crispy pork prosciutto. Our pick of the pastas would have to be the linguini aglio e olio’ ai ricci di mare, linguine served with fresh, creamy sea urchins from Hokkaido and traditional Sardinian bottarga.
