You may not get a glimpse of Chef Chan, but you’ll leave this elegant Cantonese eatery in Kallang with a strong idea of his high-wire skill, immense experience and – dare we say it – genius. Those are big words, but this food is a big deal. With signature dishes stemming from celebrated culinary techniques of the imperial Chinese Qing dynasty, Chef Chan’s Restaurant serves up sensational Cantonese and wider Sinosphere specialties of a standard hard to find anywhere in Singapore, and certainly not elsewhere on Kallang Avenue. There are various set menu options that allow you to experience a broad spectrum of tastes and techniques, but if you feel like narrowing in on one particular Chinese dish it is hard to justify harpooning anything other than Chef Chan’s signature braised shark’s fin with crab meat and crab roe.
