His world travels (he’s cooked and been a fishmonger in Australia, Malaysia, and New Zealand) brought him under the wings of some of the world’s most masterful chefs. Back in Singapore’s Bugis, he brings this experience to Laffio’s kitchen, where bold but simple creations like braised pork belly in Laffio’s home-baked sesame burger buns rub shoulders with more refined dishes like the dry-rubbed steak, served with burnt garlic, roasted vine tomato, onion rings, salsa verde and marrow sauce accompanied with chargrilled lime.
