Chairman’s Crab $10/100g
Live crab is steamed on a bed of silky smooth egg white and topped with bonito flakes and ikura to serve. This cooking style is unique to VLV, it elevates the delicate flavours of the fresh crab and creates a stunning balance of umami and sweetness on the palate. Thought goes into the presentation of the dish as well, visually the smooth bed of egg white complements the intense red of the cooked crab shell and the pockets of crab roe.
