The Boiler brings Southern American-inspired seafood to Singapore’s Paya Lebar, but with a location in the Novelty Bizcentre at Howard Road, right by Tai Seng MRT station, foodies in Geylang, Hougang and Toa Payoh are just a short trek away. The Boiler’s fresh live seafood, ribs, and burger selection is the result of the food epiphany of a Singaporean banker. Returning to Singapore from LA in 2008, his tastebuds awoken to the possibilities of Cajun cooking, he resolved to bring the flavours of the Louisianian seafood boil to his home city. Though separated by a continent and an ocean, the cuisines are surprisingly compatible – fresh seafood simply prepared in a down-home style with a distinct kick.

What comes to mind when you think of Louisiana cuisine? Soul. Creole. Cajun. Seafood and spices. It somehow makes sense, then, to find The Boiler serving up Southern-US soul food – or what the Cajun call seafood boil – in Singapore, a culture whose cuisine is strongly defined by seafood and spice. The Boiler can be found at Singapore’s Novelty Bizcentre along Howard Road, and is the passion project of a former banker whose tastebuds could not forget the moment they met Southern American-style cooking in LA. Returning to Singapore, he experimented with backyard crab-cookups, getting feedback from friends and family and to grips with the balance of flavours and ingredients typical of the style, and vowed to bring the taste of the South to south-east Asia.

The result is a colourful menu, enjoyed in surrounds reflecting a subdued, chic Americana. Crab features heavily, often served with a shoal of fresh seafoods in what’s known down south as a bombdiggity bag plus The Boiler’s signature The Works sauce. Taking hold of one of these delicious, rustic swags, it feels like you scored a clutch of briny morsels straight from the Mississippi riverside. The Boiler’s chefs create monthly specials featuring unique and limited-time-only flavours, and there’s also plenty of tex-mex style ribs, burgers and salads for the landlubbers. When you drop into The Boiler at the Novelty Bizcentre along Howard Road, don’t forget to wash it all down with an icy-cold bottle of imported Abita Louisiana craft beer.
