We love Bottura’s approach to Italian – colourful, friendly, fun – as it should be. This fresh new face in City Hall and Singapore’s crowded Italian restaurant scene is going to be a hit, and with a prime location sandwiched like so many layers of lasagna between towers one and two of the Suntec City Mall along Temasek Boulevard, we’re pleased to be be able to prophesy a large audience for their funky brand of sunkissed cuisine. There’s a very modern vibe here, but this is one Italian restaurant backed by generations of experience.

This restaurant, in the north wing of the mall between the two towers, is named for the family that run it, a family that has been creating authentic Italian cuisine for generations. At this stylish ristorante, there’s a wealth of idiosyncratic dishes created according to recipes that for a long time were the well-kept secrets of the Bottura family. The best option if you’re new to Bottura is to go for la degustazione pasta selection, six plates of the kitchen’s best with a glass of fine wine. But, when it comes to a la carte, let’s have a look at some of the highlights, the chef’s recommendations.

Our picks from Bottura’s comprehensive antipasti selection have to be the arancini ragu, perfectly cooked so that when you crack them open a mouthwatering aroma escapes. An appetiser for sure. Large groups are recommended the cold cuts and cheese platter, with a focus on delicacies from the Emilia Romagna region, served with tigelle bread and, unusually, marmalade. The polenta lasagna is a fantastic and low-gluten dish from the pasta menu, served with ragu and traditional bechamel, while the nidi di rondine or swallow’s nest is as visually appealing as it is delicious – fresh pasta rolled into a spiral and the centre filled with bechamel and ham. Main courses like the Milanese cotoletta, crisp topside beef with fried potatoes or the simple meatballs with tomato and peas are about as fantastically rustic as Italian gets in Singapore, and pair well with a traditional Italian salad: Caprese, Tonno, Norcina. Another rarity served here, sure to draw a crowd to City Hall’s Suntec City Mall, is Italian piadina, an Italian flatbread typical to Romagna, treated like the middle-ground between a pizza and a calzone and filled with ridiculously moreish ingredients like rockmelon, Parma ham and mozzarella or Parma ham, homemade stracchino cheese and rocket. Finish with a four-course dessert degustation and we know you’ll have Bottura down in your little black book.
